Chicken Caesar Pita's
Ingredients
Light Caesar dressing
Parmesan grated cheese
Fully cooked chicken fajita strips (Tyson or John Soules Food Brands)
Pita bread or Tortillas
Romaine Lettuce

Directions
Wash and cut lettuce, dice chicken, place in pita pocket or wrap in a tortilla, add cheese and cesar dressing
(Great and low fat!)

Festive Tamale Pie
Ingredients
1 cup onion, chopped
1 cup green pepper, chopped
1 Tbsp. olive oil
1 lb. Very Lean ground beef or substitute (chicken breast strips)
1 (8 oz.) cans seasoned tomato sauce (roasted garlic)
1 (10 oz.) can diced tomatoes with green chili’s
1 (12 oz.) can whole kernel corn, or black beans, drained
1/4 cup ripe olives, sliced
1 clove garlic, minced or 1 tsp. garlic powder
1 tsp. salt
2 - 3 tsp. chili powder
1 Tbsp. taco seasoning
Pepper to taste
1 &1/2 cups Light or Fat Free sharp cheddar cheese, shredded

Cornmeal topping
3/4 cup yellow cornmeal
1/2 tsp. salt
2 cups cold water
Stir cornmeal into water and cook until thick, mix well.

Directions
Preheat oven to 350 degrees F.
Cook onions, peppers in oil until tender. Add beef and cook until browned, drain grease. Add tomato sauce, diced tomatoes, corn or black beans, garlic, olives, and seasoning. Simmer 20 - 25 min. or until thick. Add cheese stir until melted. Pour mixture into greased 9 x 13 inch baking dish. Spoon cornmeal topping over meat mixture, spread evenly. Bake 40 min. or until top lightly brown. I also sprinkled 1/2 cup of cheese on top just before removing from oven.(NOT NECESSARY ANDS MORE CALORIES) Continue to bake until cheese melts. About 5 min. Makes 6-8 servings.

Remember the more you eat, the more calories you consume! Small portions....

Vegetable Medley
Ingredients
1/4 cup olive oil (or less)
2 large sweet potatoes, sliced
4 red potatoes, cubed
1 large onion, sliced into rings
1 teaspoon minced garlic or 1/2 tsp. garlic powder or to taste
2 green bell peppers, sliced
2 red bell peppers, sliced
2 carrots, diced
1/4 cup Italian-style seasoning

Directions
Preheat oven to 350 degrees F. Coat the bottom of a 9x13 inch baking dish with oil. Spread sweet potatoes on the bottom, then top with red potatoes, onion, garlic, green bell peppers, red bell peppers and carrots. Sprinkle seasoning generously over all and cover dish with aluminum foil. Bake at 350 degrees F. for 1 1/2 hours or until potatoes are cooked through and tender; remove foil cover and stir. Change oven temperature to 425 degrees F. and bake mixture in oven for another 1/2 hour, or until browned on top.

I would make this my meal with a grilled skinless chicken breast strip. NOT the whole breast.

Cinnamon and Honey Tea
Combine one teaspoon honey with one-half teaspoon cinnamon powder and boil in one cup of water. After the mixture has boiled, filter it into another cup. Divide the mixture into two half-cup quantities to be consumed one-half hour before breakfast and one-half hour before going to sleep at night. Some proponents recommend adding raw honey after the water has boiled to retain nutrients and thus the benefits.

Iced Green Tea
6 green tea bags
3 cups boiling water
1 Tbsp lemon juice concentrate
1 pkg splenda or to taste (I don't like it sweet)

Bring water to a boil, place tea bags in a tea pot or glass container.  Pour boiling water over tea bags, cover and let set for 10 min. pour mixture into a 2 quart picture add 1 Tbsp. Lemon juice, 1 cup ice and fill to 2 quarts. Add 1 pkg splenda stir to counter act the sour lemon.  Serve over Ice.

 I don't like Green Tea, but I made it into an Ice tea with lemon... And it's really good! And Green tea is good to drink on a diet plan.
